Yves Rudy, roaster, is committed and offers you very high quality coffees near you! More than a passion for our creator, who therefore decided to embark on this vast and very interesting field by ensuring the production and sale of grand crus coffee.

 

Our logic is based on the production and sale of organic specialty coffees, locally and artisanally. Our selection of beans is carried out with our greatest care, to allow you to consume quality coffee. We want to highlight the quality of our products, as well as the very strong ability of our creator to carry out this job rigorously, and with passion.

 

A passion that is the very basis of coffee for Mr. Rudy, being determined to offer you a fair balance between the quality of our products and his eco-responsible approach. It is indeed in our workshop in Wasselonne in the Bas-Rhin where our roasting takes place, according to a very rigorous method, but also very different according to the desired extraction.

For an optimal tasting of your coffee, we advise you to consume it between 1 and 10 weeks after roasting.

Our working methods
Roasting
Roasting is primarily the action of exposing a food to a direct fire or to an adapted heat source. This then makes it possible to emit an aroma that recalls the smell of slightly grilled, calcined foods. Roasting is also used in particular for the manufacture of coffee or cocoa.

During the roasting process, the beans are heated to a temperature above 190 °C. It is not the flame that will roast the coffee but the heat diffused through an oven that will bring about this transformation.

In particular, there are 8 roasting steps for a successful coffee with unique flavors: Thermal shock, drying, caramelization, maximum temperature, the first crack, the cooking heart and cooling. Each of its steps are important to obtain a brilliant coffee.

The bag
The special baging of roasted coffee plays a crucial role in preserving the taste and quality of an exceptional coffee. After roasting, the coffee releases delicate aromas and essential oils that define its unique profile. However, these volatile compounds are very sensitive to oxygen, moisture, light and heat.

Suitable packaging protects the coffee from these external aggressions, thus avoiding oxidation and flavor degradation. The special bags, often equipped with unidirectional valves, allow the carbon dioxide released by the coffee to escape without letting air in, thus ensuring optimal conservation.

In addition, these airtight packaging keeps the coffee fresh for several weeks, ensuring that each cup offers a taste experience faithful to the roaster's intention.

In short, the special bag is essential to offer amateurs an exceptional coffee, rich in aromas and quality.
